Tuesdaily with zucchini

What's your favorite zucchini recipe? I made a lovely bread with chocolate chips that I will do again, and I'm planning to try Turkish Zucchini Pancakes - what else have you got for me? Savory, sweet, anything! We aren't lacking in zucchini to experiment with!

Progress has been made on my last Fantastrix piece - I erased the three dragons in the foreground entirely and scaled them up to give the piece more of a sense of depth, and I like it a lot more now. Some experimentation with dragonscales, but I think that's a blind alley - I'm not really happy with the results and will probably fall back on stuff I know works better.

There's a blizzard in Atigun pass and it's raining like crazy here today. Thank HEAVENS for driveway rock. Also, the signs of fall are making me pouty. On my walk last night, I spotted several branches with leaves turning colors already. The raspberries that are left on the plants are getting well past ideal, and the cranberries are turning brilliant red.

Our garage is underway! The slab is nearly ready for concrete, though the rain is keeping the contractors away today. I should take photos, but it's raining and I'm warm inside.

Okay, I need more food and it's time to get more done.

Chocolate zucchini bread om nom nom nom!

Zucchini sliced and sauteed with sliced sausage (and maybe onions).

I use it as a major ingredient in chunky vegetable sauce for pasta.


Potato-zucchini pancakes. (Most people would probably call them fritters?) Shredded potato, zucchini, and onion, eggs, flour, a little salt, drop by spoonfulls into hot oil, flatten, fry until browned, flip, fry until browned, drain on paper towels. Serve with apple sauce or sour cream.

Roasted stuffed zucchini. Mushrooms and breadcrumbs and herbs, usually, but anything that catches your fancy. That works better with small zucchini than with baseball bats.

I'm told it can be made into pie or crumble just like apples -- I think with brown sugar and cinnamon? Haven't tried that, keep meaning to.

I grate zucchini up and mix it with ground turkey, some chopped onions and bell peppers, and a variety of sauce/seasonings to make a turkey meatloaf!

I have a recipe for a zuccini slice that involves grating it and adding it to egg and bacon. You cut it into squares and it's very tasty. If you're interested I'll dig it out at home later :)

I like to roast them, with squash, onions, and other veg. They are good like that, but then, if I have roast chicken lying around, I layer them with noodles, feta and a lemon gravy and make "Greek" Lasagna.

I like to just cut them into spears and dip them in an Asian dip. I use Kewpie, (Japanese mayo but lots of MSG) but you can use any mayo, sesame oil, a few shakes of soy sauce and stir.

The turning trees are just killing me too. IT'S STILL AUGUST!!! I'm hoping the heavens hear my cry. I know you guys have mountains of snow to cope with; we have 7 months of rain, so I feel your pain. At least we don't have to shovel rain...

Thanks for the link to the pancakes! I was just thinking about zucchini earlier. You're the THIRD person on my list today to post about zukes, and now I need some badly.
